Matcha Raspberry Latte RECIPE

Vibrant ceremonial matcha meets a tart fresh raspberry layer — two-tone, naturally sweet, and as beautiful as it tastes.

  • 1.5 teaspoons ceremonial grade matcha powder
  • 45 milliliters hot water (80°C)
  • 80 grams fresh or frozen raspberries
  • 1 tablespoons honey or maple syrup
  • 180 milliliters oat milk (barista)
  • 1 cups ice cubes
  • 0.5 teaspoons lemon juice

  1. Make the raspberry layer: Muddle or blend 80 grams fresh or frozen raspberries with 1 tablespoons honey or maple syrup and 0.5 teaspoons lemon juice until smooth. Push through a fine sieve to remove seeds. Set aside. This is your base layer.
  2. Whisk the matcha: Sift 1.5 teaspoons ceremonial grade matcha powder into a small bowl. Add 45 milliliters hot water (80°C) and whisk in a brisk W motion until fully dissolved and a light foam forms on top. No lumps.
  3. Build the glass: Fill a tall clear glass with 1 cups ice cubes. Pour the raspberry mixture over the ice first — it sinks to form a vivid pink-red base layer.
  4. Add the milk: Pour 180 milliliters oat milk (barista) slowly over the back of a spoon onto the raspberry layer. It will float as a white middle layer between the raspberry and the matcha.
  5. Float the matcha: Pour the whisked matcha slowly over the back of the spoon on top of the milk. Three distinct layers form — pink-red at the base, white milk in the middle, vivid green matcha on top. Stir gently before drinking.

The layer secret: Temperature and density control the layers. Raspberry syrup is densest so it sinks. Milk sits in the middle. Matcha floats on top. Pour slowly over the spoon every time.

Frozen raspberries work better than fresh for the syrup — they break down faster and release more colour. The pink-red base layer is more vivid with frozen.

Make it sweeter: Add an extra half teaspoon of honey to the raspberry mixture if your raspberries are tart.

Dairy alternative: Full-fat coconut milk creates a richer middle layer and pairs beautifully with raspberry.
